Fat to Lean Ration in Ground Beef
Our processors do not test each batch of ground beef, therefore do not label the fat to lean ratio on the packaging. We find most of our ground beef to be similar to 80/20 or 85/15. Our grass-finished ground beef is typically leaner than our grain-finished ground beef but does vary with each animal.

What type of cows do you have?
We raise British breeds which thrive on pasture. Some of those breeds are Herefords, Galloway, Red Devon, and Angus cattle.
What is the difference between cows and steers?
Cows are females that have had a calf. Heifers are females that have not had a calf yet. Steers are castrated males. We have a mix of cows, heifers, calves, and steers on the farm. Typically, the steers get grain-finished, and heifers get finished on grass as they get better condition/finish that way.
Are your cattle grain fed or grass fed?
We practice Intensive Pasture Management which means the cattle move to a different section of pasture daily. Over winter they enjoy hay out on pasture.
Some of our cattle will come off pasture to get finished on grain and hay. The steers finish nicely on grain with great marbling in the steaks.
The cattle that remain on the pasture are grass-fed and grass-finished. They do not get grain in their lifetime and will go to market as grass-finished beef.
How is meat packaged?
All meat we have for sale is frozen. Most cuts are vacuum sealed in plastic. Occasionally organ meats or specialty items might be wrapped in freezer paper. All beef and pork is labeled and has appropriate labeling showing that it was processed at an inspected facility.
Chickens are vacuum sealed in plastic and froze. Chickens are processed at a USDA inspected facility.
How much is a quarter beef?
You can find an estimated cost breakdown here. For a half you can multiply that example by 2 and for a whole you can multiply it by 4.
What cuts do I get with a quarter beef?
