Stuffed squash is a fall favorite that pairs perfectly with the robust flavor of our farm-raised sausage. This recipe is both nutritious and filling, making it ideal for a weeknight dinner or as a beautiful dish to impress guests.
Ingredients:
- 2 acorn squash, halved and seeds removed
- 1 lb. May Hill Farm seasoned pork sausage
- 1 onion, diced
- 1 apple, diced (Granny Smith works well)
- 1/4 cup dried cranberries
- 1/4 cup walnuts, chopped
- 1 tsp fresh sage, chopped
- 1/2 tsp cinnamon
- Salt and pepper to taste
Instructions:
- Preheat oven to 400°F. Place acorn squash halves cut side down on a baking sheet. Roast for 30-35 minutes, or until tender.
- In a skillet, cook sausage over medium heat until browned. Remove sausage and set aside.
- In the same skillet, sauté the onions until translucent. Add diced apple, cranberries, and walnuts, and cook for another 3-4 minutes.
- Stir in sage, cinnamon, salt, and pepper. Return the sausage to the skillet and mix well.

Instructions:
